Kerala Beans Stirfry/ Payar Mezhukkupuratti

Kerala beans stir fry

When ever our large clan gets together in Kerala, all the women folk converge at the kitchen table and you will hear them laughing and talking as their fingers fly splitting open long pods of beans into neat little piles of shiny plump little beans. We kids used to run around the group of aunties who didn't seem to mind or even notice us as they peeled and chopped onions, pounded spices, sizzled mustard seeds, stirred curries and efficiently cooked enough food to feed an army or one hungry brood!

This time when I visited Kerala, I very eagerly joined my aunts in the kitchen. They were very patient with how slow I was compared to them and they overlooked the fact my pile comprised of more pod bits. I still don't have the patience to carefully pry open even the stubborn tender parts of the bean pod which house the tiniest of beans so I break off that part of the pod with the skin though my aunts can coax a bean out of even the narrowest parts of the pods.

This simple garlicy and spicy stir fry of beans is made very often and it's one of my favourites. I could eat a bowlful and it is very easy to make, if you can get past the pesky shelling or do what I do and simply break up the pods into little sticks if you don't mind the skin like me.


I was very happy to see these long beans at the farmer's market here. I think they are called Red Chinese long beans here and are available all year round. As soon as I saw the bunch I immediately wanted to make them into this beans stir fry which is all I can imagine making with them! You can use any variety, even french beans which you wouldn't be able to shell but simply break up. 


This type of preparation using just oil and spice sometimes onion and garlic is called "Mezhukkupuratti" in most parts of Kerala, meaning smeared with oil. It is often used to cook a variety of vegetables and is one of the most basic and popular ways to cook vegetables in South India. Thoran is a similar vegetable preparation but with the addition of shredded coconut and often tempered mustard seeds as well.


I know I post a lot of cake on this blog. I enjoy baking and I do love cake. But what we eat most of the time are simple vegetable or lentil dishes like this that get cooked in a hurry, usually about an hour before  dinner time and it's too late and too dark to take pictures. This year I hope to share more of these delicious and healthy dishes which very unfairly didn't get the attention that they deserve. Hopefully this will motivate me to also start cooking earlier, not scramble around in the evening trying to throw a meal together. Thankfully quick, healthy meals like this can also be super delicious!


Peas and Tomato Curry and Happiness

It's a little late to wish you a Happy New Year. Still I hope you all had a great time and have a truly wonderful, blessed year ahead. 
Our New Year was pretty low key, just the three of us at home, still it was nice. A bottle of champagne, The BEST pizza EVER - and it was home made! (recipe coming soon, I promise) chocolate truffles from Wholefoods (Surprisingly good. Surprising since it is vegan) and a movie in our pj's. 

I didn't even make a long list of resolutions to go and break in a week. Infact it was only today, as I was typing this post-my first, shiny new post of year 2012,  that I decided to make just one. 

No, this year I am not even going to bother resolving to hit the gym or to only eat salad. I know I would rather dance and jump around with my toddler than lift weights right now. It cracks me up that he's learnt to say "Shake it!"  and that most of his dance moves right now involve clapping or spinning around dizzily. 
I know that I will try to cook healthy food like this green peas curry in tangy tomato gravy that I will enjoy eating too, but sometimes I will want a slice of cake.

Yes, this year I have only one resolution: To be happy. 
My dad told me once how he read somewhere- that even if you are not feeling happy, if you decide that you are and even if you act happy you can convince your brain that you are!
In other words, happiness is in your mind and you can make up your mind that you will be happy no matter how anxious, guilty, or just plain sad you feel. 
And if you are happy then people around you, you kids, your spouse will be happy and you end up uplifting your whole family, your workplace, heck maybe even the world! 
I really hope you try this easy and healthy peas curry. I am quite sure that it will make you happy -at least while you eat it :)

This has been one glorious summer. Beautiful sunny days just meant to be spent outdoors. Picnics, barbecues  melting ice cream, fairs, trips to the park and the  farmers market and a bounty of fruits and veggies and grilling. Let's not forget the grilling!

This is a picture I love of the little monkey going for a walk (or rather a run!) with his Ammama, after which he brought me this flower, sometimes its a leaf or a twig. Once it was a tiny rock. Toddler treasures! 


But back to the grilled chicken which made this summer complete. Simple to make on a grill or under the broiler or even on a pan on the stovetop. Easy and delicious! 

Sambhar and Cilantro Coconut Chutney

 I am grateful to be free today and not shackled by terror and fear, pain, disease, anxiety, guilt, and hunger. While celebrating freedom, and everything Indian that I love and hold dear today, being India's 64th Independence day I decided to post a very simple recipe for Sambar and Coconut Cilantro Cutney as an accompaniment for morning idlis. Sambar a typical Tamilian dish, is a simple lentil stew with vegetables and spices is one of the most well known and common everyday dishes, not just in the south but thanks to the popularity of masala dosa and idlis, everywhere in the country.  Truly, sambar, idli and dosa makes the nation come together!




When I was studying I lived in our college hostel in Tamil Nadu and  what started off as dhal or parripu in the afternoon, would sometimes turn into rasam at night or sambhar in the morning! Perhaps not the best place to develop a love affair with Sambhar, but I blame that daily morning dose or (rather dosa! ) for my lifelong obsession with Sambhar and with lentils. One time during the rainy season while we were all gathered in the mess hall for breakfast, the usual morning chatter of over a hundred hostelites was broken by a loud shriek. What happened was this: one of the girls was eating her dosa and sambar and took a dab at a curry leaf and to her shock, it moved! turned out the "curry leaf" was actually a small slug that had fallen into the sambhar!  Not the nicest story to associate with sambhar, but everytime I eat sambar, I remember that rainy morning, and the many meals made better because it was shared with large groups of chattering girls. How I miss them all! 


Here is a more delightful little story entitled I love him and he does not like sambhar  over at mylittlemagazine that I chanced upon today which I really identified with, being a Madrasi ( actually Malayali from Kerala) in Mumbai for two months, I was asked hilarious questions like " Is Bangalore in Madras?" No, they are two cities in two different states, I would patiently reply to much nodding for anything south of Mumbai is termed South India and loosely Madras! I sought to explain how each state has its own distinct identity, language, culture and food. And seriously, it never ceases to amaze me. 

Boysenberry Yogurt Parfait- Berry Happy Fourth of July!

This really doesn't need a recipe.The top layer is just juicy berries mashed with yogurt ( I used plain, non fat) and a teaspoon of sugar if the berries are too tart. Just stir them up with a spoon in a coffee mug. ( that's how I eat it when I don't have to make it look pretty for pics- in a coffee mug). No food colouring, that beautiful pink (not quite red) came from the berries.  The middle layer is plain yogurt with or without sugar to sweeten  and the bottom layer is granola, graham craker crumbs, cereal, whatever you want.
Top with berries and enjoy a chilled fresh and fruity healthy dessert, breakfast or snack.

Whole Wheat Dosas- Savory pancakes


The four year old me looked down at my plate and then at his. In his plate was a special dosa- it was darker than mine, and quite different. A quick look around the breakfast table confirmed it. My grandfather was the only one who had been served this unique dosa and thus it had to be really special. "I want Appa's dosa!" I insisted, which elicited smiles from the adults, because Appapa's dosa was the healthier whole wheat dosa or Godhamb dosa, specially made for him as he was diabetic while the rice batter based dosa that was the popular choice, was served to us. Since then,  my grandmother made sure to serve me wholewheat dosas, or whole wheat puttu ( usually made with steamed rice flour) rava idlis or whatever else Appapa was having and I beamed with pride to have these special things just for Appapa and me :)
It must have started then, my preference for this version, (and for whole wheat and whole grains in general) which may be healthier, but in my mind is special-ler! and oh soo much more easier to make!

Whole Wheat Cardamom Nankhatais- The Indian Cookie


When my blogging buddy Ria visited me a few months ago, she brought me these wonderful cardamom scented, buttery, crunchy cookies. T and I fought each other for the last ones and I have been longing for them ever since.
Ria finally posted these on her site yesterday and I had to bake them immediately! 
I ate a little of the yummy cookie dough while I was mixing it in a bowl with a fork. I breathed in the cardamom aromas that filled my kitchen while they were baking. I popped one still hot into my mouth straight out of the oven- It burned my mouth but it was sooo good! Finally when they had cooled T and I began competing for them all over again.

Daring Baker's challenge: Vanilla bean Yogurt Panna cotta with Blackberry coulis



I recently joined the Daring Baker's group because I thought in addition to chasing after a little monkey who is all over the place, making sure he doesn't climb into cabinets, eat insects or paper ( his treat of choice) hang upside down from his swing ( when he's feeling a little xtreme sportsy) and other unpredictable heart attack inducing (for me)  feats, I needed to be challenged. That I needed even more worrying, meltdowns, anxiety attacks.

Cardamom Carrot Cupcakes- Vegan Dairy-free and Gooood for you!



A few days ago a friend asked me if I had a good carrot cake recipe. I didn't have one that I had actually tried and since then I have been dreaming of carrot cake. So this post is for her, for me and also for all those mommas out there who have kids (or hubbies) who don't eat their veggies. Here is the answer- put those unloved veggies in cake! Then sit back and watch them being devoured.Oh and devour some yourself-they taste fantastic!
I see myself doing this a few years from now when Jelly bean can but wont! eat his veggies. I will sneak zucchini in chocolate cake and make these tasty, healthy carrot cupcakes very, very often.
This genius, deceptively simple recipe is again from Vegan Cupcakes Take over the World.
Being Indian and because I love carrot halwa I had to play around with the spices so the changes I made were to add cardamom (elachi) and cloves in addition to the cinnamon in this fantastic recipe. I'm so glad I did. The whole house is filled with the aromas and I had to restrain myself from scooping up and eating all of the batter. I might also add some shredded fresh or frozen and thawed coconut next time.






Carrot Cake Cupcakes

Dry Ingredients
  • 2/3 cup all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger ( I overlooked this, maybe next time)
  • I also added: 
    • 1/8 tsp clove powder 
    • 3-4 elachi powdered ( I just put the seeds on a paper towel, folded the towel over and whacked them with the back of my metal measuring cups until crushed and sort of powdery)
    • 1/2 cup shredded fresh or frozen and thawed coconut ( Didn't add this time but will next time)
Wet ingredients
  • 2/3 cup sugar
  • 1/3 cup vegetable oil
  • 1/3 cup soy yogurt (plain or vanilla) 
  • 1 teaspoon vanilla 
  • 1 cup finely grated carrots ( I thawed frozen carrots for 2 mins in the microwave then pulsed them in my food processor on the chop setting. Don't pulse for too long lest they turn mushy)
  • 1/4 cup chopped walnuts ( I didn't add these)
  • 1/4 cup raisins (I hate raisins in cake so didn't add this either)
Frosting: I used the cream cheese frosting from here


Method
  • Preheat oven to 350 degrees F. Line muffin tin with 12 cupcake liners.
  • In a medium mixing bowl, mix together the wet ingredients sugar, vegetable oil, yogurt, and vanilla. 
  • Sift in the dry ingredients (flour, baking soda, baking powder, salt and spices), and beat until smooth.
  • Fold in shredded carrots, walnuts and raisins.
  • Spray the cupcake liners with non-stick baking spray. Fill the liners 2/3 full. 
  • I also pushed in a cashew on to the top due to my carrot halwa hangover.
  • Bake for 26-28 minutes ( I had to bake for 40 minutes and it was still a little gooey), until a toothpick inserted through the center of one comes out clean.
  • Once fully cooled, top generously with cream cheese frosting.
Or you could do what I did-poke a hole in the middle of the bottoms of each cupcake with my index finger, then using a medium round icing tip, fill with frosting.
I didnt have pastry bags so I tried using instead, an extra medicine dropper we had from the pharmacy, with which I sucked up the frosting and squeezed it into the centers. Worked quite well.

I made one biiig mistake with this recipe. I didn't double it.and that makes me sad because these are so gooood. Tender, moist, aromatic, chewy, slightly sticky interior and crunchy top yummyness! I only made 12 and they are almost over already. I'm just eating carrots I rationalize. Adding this to my mental list of favourite recipes and I highly recommend you do too. Easy & Quick Bourbon Chicken



Bourbon chicken is a flavorful chicken dish named after Bourbon Street in New Orleans, Louisiana and for the bourbon whiskey ingredient. The dish is commonly found at Cajun, Chinese, and American BBQ themed restaurants.
The recipe includes soy sauce, brown sugar, ginger, and bourbon in the base, and the chicken is marinated in this sauce. - Wikipedia 


Almost all Chinese take out menus and those at the mall food courts feature some version of this chicken in a dark sweet/sour sauce served over mounds of steaming white rice. I found this recipe while looking for something to whip up quickly for dinner one night and was intrigued by the more than 2000 reviews it had received over at recipezaar. It may not be athentic, but so many people thought it was great- fast to whip up and delicious, and I do too!


Bourbon Chicken

Ingredients
  • 2 lbs boneless chicken breasts or tenderloin, cut into bite-size pieces
  • 1 tablespoon olive oil
  • 1 garlic pod , crushed ( I used garlic paste)
  • 1/4 teaspoon ginger ( I used ginger paste)
  • 3/4 teaspoon crushed red pepper flakes
  • 1/4 cup apple juice ( I used store bought prune juice, others have used orange)
  • 1/3 cup light brown sugar ( I used regular sugar)
  • 2 tablespoons ketchup
  • 1 tablespoon cider vinegar
  • 1/2 cup water
  • 1/3 cup soy sauce
  • 1 tbsp to 1/4 cup Bourbon whiskey ( Optional) 
Method
  • Heat oil in a large skillet.
  • Add chicken pieces and cook until lightly browned.
  • Remove chicken.
  • Add remaining ingredients, mix well over medium heat until everything is dissolved and well combined.
  • Add chicken and bring to a hard boil.
  • If you like the sauce to be thicker, you can add 1 tsp of cornflour diluted in about 1/4 cup water while boiling and mix well. 
  • Reduce heat and simmer for 20 minutes, stirring often.
  • Serve over rice and with steamed vegetables.

It's all done in about half an hour and is so easy to prepare but tastes like you have slaved for hours. Was an instant hit and will definitely be made very frequently.

Today's dinner-Easy Baked Chicken


Today was one of those days when Jelly Bean didn't want me out of his sight. Elaborate cooking plans on these days, with a squirming baby attached to my neck and arm will not work. So instead of having Geek get us more In-and-Out's delicious, really delicious burgers dripping mayo, I surprised him with this easy-peasy, totally awesome baked chicken. With a prep time of about 60 seconds and then tossed in the oven for 50 mins-what else can you ask for? Not even In-and Out!

Easy Baked Chicken

Ingredients
  • 4 chicken breasts/ or tenderloins, (if you get them with skin they will crisp nicely)
  • 1/4 cup olive oil. (You could also use melted butter if you're feeling naughty :)
  • 1-2 teaspoon Seasoning-All salt (like McCormick's Seasoning salt, I used Mc Cormick's garlic powder and Beef stew seasoning  )
  • 1 tsp pepper
  • 1 tsp dried Oregano (optional) 
Method
  • Preheat oven to 400°F.
  • Take a shallow baking dish and pour half of the olive oil into it.
  • If you want you could also lay some slices of onion, tomato and chopped garlic
  • Now place the chicken breasts
  • Pour the remaining olive oil/butter over the chicken
  • Rub the seasoned salt or other seasoning over the chicken.You could also add some herbs like thyme and rosemary if you prefer.
  • Bake for 50-60 minutes or until cooked through but don't over cook, as they might be tough.

    Verdict:
    The chicken was tender, juicy, cooked perfectly. I served it over some frozen beans which I cooked in the microwave per manufacturers directions, with some salt and pepper in the same dish (corning ware) that I'd baked the chicken so that it was covered in the lovely baked juices.
    I cooked the potatoes too in the microwave,  for about 5 minutes on High after cutting them into cubes or whole, after poking holes in them with a fork and rubbing them with some oil and salt. After 5 minutes switch off the mirowave and let sit for 1-2 minutes. If they feel like they are not done simply nuke them for a few minutes longer. Microwaved potatoes taste just like they have been baked and are soo easy! This is the only way I cook potatoes now.
    This baked chicken offers many variations. Next time I will try seasoning the chicken with lemon juice salt  and pepper. This chicken can be served over rice, with pasta, in a sanwich with freshly baked bread, in soups etc.

    Edited on 17th Nov 2010 to add:
    This has become my go-to recipe whenever I'm exhausted after a day of running behind our little crawling monkey who is all over the place. I made it again tonight when the thought of slicing and stirring made me want to cry. Today I used:
    2 chicken breasts ( I buy a big pack of individually ice glazed chicken breasts from costco and defrost in the microwave)
    1/4 th spoon of lemon pepper
    1 tsp of oregano leaves
    1/4 tsp of pepper powder
    A light sprinkling of adobo goya seasoning salt
    1/4 cup of gralic infused olive oil
    1 whole russet potato cut into cubes

    I also spread some of the garlic infused olive oil on some bread (or use regualr olive oil and just rub a fresh garlic glove cut in half over the bread) and put it on a cookie sheet in the oven during the last 10 mins to have some garlic bread on the side as well. Easy and delicious dinner and I barely had to cook it!

    Instant Comfort- Rice Pudding (Vegan)


    I have a very sweet tooth. You could never tell right? ;) Well, when I'm craving something sweet I want it RIGHT NOW! that's why I always keep a secret stash of lil' dreamers. Ssh! don't tell! But this one time last week I was craving my sugar fix, and ransacked my fridge to find cooked rice left over from lunch and a carton of soymilk, and other assorted fridge dwellers but no lil dreamers.

    So I made this quick and easy rice pudding that was incredibly satisfying and much lower in calories than the ice cream I was craving.

    Oh by the way, Silk's Very Vanilla soy milk? YUM!It's got a stronger vanilla flavour than their regular vanilla soy milk and its just like drinking vanilla ice cream.


    Vegan Rice Pudding

    Ingredients
    • Cooked Rice 1 cup (I used a long grain called Sona Masoori, you could also use Basmati)
    • Ground Clove powder 1/4 tsp
    • Cardamom/Elachi- a few
    • Soy Milk/other or regular dairy Milk - 2 cups
    • Sugar- 3 tbs
    • Salt-a pinch
    • Vanilla essence- 1 tsp (if you use vanilla soy milk, you don't really need this)

    Method
    • Take all the ingredients except the vanilla essence in a saucepan and put on medium heat over the stove
    • Bring it to a boil stirring occasionally
    • Let it simmer till the mixture has thickened slightly
    • Add the vanilla essence and stir
    • Let it cool
    • Serve warm or chilled

    You could also add strands of saffron, slivers of almond or raisins and cashew. Sorry the picture isn't very great. Just took one while it was still cooking in the pan. Didn't really get to pretty-fy it since I just wanted to eat it as soon as it was done. Scalded my mouth a little too but it was so worth it!
